1+1 (You and Me) Cocktail

Ingredients
Ice, for serving and shaking
4 oz cold brewed butterfly pea flower tea (see Chef's Note)
2 oz ruby red grapefruit juice
3 sprigs fresh mint, plus more leaves for garnish
4 oz vodka or Almave Blanco to make it NA
Turbinado sugar
Grapefruit-flavored sparkling soda such as San Pellegrino Pompelmo, for serving
2 ruby red grapefruit wedges for garnish
Special equipment: a small kitchen blow-torch (but, not required)
Directions
On a rimmed baking sheet, lay out the grapefruit wedges. Sprinkle each slice with some turbinado sugar. Brûlée each slice with a small kitchen torch. If you do not have a kitchen torch, place the sugar coated grapefruit under the broiler for about 30-60 seconds. Keep an eye on it, you don't want it to burn. Set aside while we make our cocktails.
Fill 2 old-fashioned glasses with ice.
In a cocktail shaker - pour in the tea, grapefruit juice, mint and vodka. Add in some ice and shake for 15-20 seconds. Strain into your glasses and top off each glass with the grapefruit sparkling water.
Garnish with fresh mint leave and place a grapefruit wedge on top.
Cook's Note: Butterfly pea flower tea is made from dried blue pea flowers and can be found at some natural food stores and online. When the brewed tea is mixed with an acidic ingredient like grapefruit, its color changes depending on the pH level of that liquid. This is why the cocktail color turns this beautiful soft purple color.
Propane gas torches are highly flammable and should be kept away from heat, open flame and prolonged exposure to sunlight. They should be used only in well-ventilated areas. Follow torch manufacturer's instructions for use.
